Golden Syrup Dumplings

Dumpling Ingredients:
1 cup self-rising flour
2 tblsp butter
1 egg
1/4 cup milk

Sauce:
1 cup water
2 tblsp golden syrup
1 tblsp butter
3 tblsp brown sugar

(NOTE: This sauce is just enough to cover. If you like a more "saucy" pudding, use 1 1/2 cups water, 3 tblsp golden syrup, 1 1/2 tblsp butter, keeping brown sugar at 3 tblsp to avoid making the sauce too sweet.)

Method:
Place the flour in a bowl and rub in the butter.
Make a well in the centre of the flour and add the egg and milk.
Mix together with a knife to make into a soft dough.
Put the sauce ingredients into a medium-sized saucepan and bring to the boil.
Grab handfulls of the dough and roll into six - eight even sized balls.
Place each dough ball into the saucepan with the boiling sauce mixture.
Cover and simmer for 15 minutes.
Serve hot with cream and/or ice cream.
